Pancake Tuesday - The best Pancake Recipe around

Pancake Tuesday is just around the corner on February 25th and to celebrate we've found the best recipe in town.

 

Pancake Tuesday or Shrove Tuesday started out as a Christian tradition. It was the last day before lent, where they would give up luxury foods such as eggs, fat and milk for 40 days. The word ’Shrove’ comes from the Roman Catholic practice of being 'Shriven' or to be absolved of their sins. On Tuesday, churchgoers would go and confess their sins, and when they got home they would get rid of all their temptations which were mainly food, in order to prepare for lent. This was known as ’Shrovetide’. 

 

 

The Calnan Walsh Family recipe has been tried, tested and loved by many over the years. Rigorous tasting and testing happens every year in order make the best pancakes possible.

Makes : about 12 pancakes

2 large Eggs

275 mls of Milk

110g of Flour

Pinch of salt

Juice of half a lemon

Butter 

 

Weigh out your flour and put in a large mixing bowl and make a well in the middle.

Measure out 275mls of milk and crack your eggs in. Whisk gently. You just need to break the egg yolks but no need to whisk it fully as they will mix in with the flour.

Add your milk and eggs gradually and stir with a whisk. Keep adding and mixing your milk, eggs and flour until you get a smooth batter. If there are some lumps left, use a spatula to work them out against the side of the bowl. Keep stirring until all lumps have disappeared.  Add a pinch of salt and stir in. Make sure you add you salt at the end of the mixing for the best flavour.

Put your pan on a medium/high heat. It may take one or two pancakes to find the right heat. Add a knob of butter and don’t be shy, make sure the pan is completely covered, especially the centre, as we don’t want anything to stick. Pour your pancake batter to the centre on the pan, it will depend on the size of your pan but about half a ladle worked best for me. If your mix is bubbling the heat is too high, if the first layer doesn’t immediately cook and stiffen up its too low. I like to sprinkle a little sugar on top as it’s cooking, this will caramelise slightly and give the pancake a wonderfully sweet taste. Flip and repeat.

The next part is up to you, add some sugar, lemon or even nutella to taste and enjoy the best pancakes around!
